The most common empanada fillings are beef and cheese but there are many other fillings that are used as well. Sometimes, the shape of the empanada is a good indication of the type of filling. For example, more rounded shapes mean that it may have cheese inside while triangular ones mean that they are sweet empanadas.
Another way to identify the fillings is by how the empanada is sealed or crimped, called “repulgue” in Spanish.
One easy “repulgue” that anyone can do is by sealing the empanada with a fork. After folding the dough around the filling, just press on the dough with a fork to seal both sides of the dough. Other “repulgues” need a little more practise to master.

It’s very helpful to have a clear way to identify different empanada fillings since in many cases, people order a mix of different ones. Shapes and “repulgues” vary from country to country and chef creativity.
